Bake in the middle of the oven (45 -55 minutes) until cake is set 3 inches in from the edge, center should still be wobbly when gently shaken. Let sit 10 - 15 minutes on a rack. Run a thin knife around the edge of the cake to loosen, then cool completely in pan on the rack. Cake will continue to set as it cools. Chill in the refrigerator for at least 2 - 3 hours.
